Step 1: Prep your jar. Since these are refrigerator pickles you do not have to go to the same extreme as canning for shelf life. Simply ready a clean jar. Step 2: Onion Slice Cut one end of the onion off and peel the onion. Cut the red onion as thin as possible. This is where I love my Pampered Chef products like the slicer.
Step 3: Boil and mix In a medium sized pot (I highly recommend a Paul Deen no stick pot for this) combine sugar, salt and vinegar. Bring to a boil over medium heat for until the sugar has dissolved. Stir frequently. Add Allspice and Red Pepper flakes mixing it again. Now add Onions and set it to cool completely.
Step 3: Jarring Place into clean jars and seal with a lid. Refrigerate and enjoy after 24 hours.
Jars store refrigerated for approximately a month.
